Castello Di Stefanago

Antonio and Giacomo Baruffaldi have long followed organic farming, striving to achieve healthy, natural grapes, that reflect the terroir on which they are grown.

A family long tradition

The Castello di Stefanago winery is a historic producer in the Oltrepo Pavese hills ( Lombardy) that has always been committed to producing local wines, gradually adopting more innovative and less interventionist winemaking techniques. The Baruffaldi family has been producing wine for five generations in the town of Borgo Priolo, in the province of Pavia,

Castello di Stefanago now owns 20 hectares of vineyards, located on clayey and sandy soils rich in chalk at an altitude of about 400 meters above sea level. They are characterised by perfect exposure to the sun, daily breezes and exceptional temperature ranges between day and night that allow the grapes to ripen perfectly.

Wines that represent their territory

Antonio and Giacomo have long chosen organic cultivation: a discreet and accurate work in the vineyard and in the cellar; the respect of the natural rhythms and the research of the ancient methods of winemaking, are the ingredients which charachterize and give personality to wines which “speak” of the territories whence they were born.

The cellars

The cellars are in the castle which still remains from the fourteenth century in the center of the property, around which there are about eighteen hectares of vines and 135 hectares of meadows, forests, orchards, and arable land.

Ancestrale

Castello di Stefanago is best known for having created an exceptional and innovative version of sparkling wine, which is the result of a production method known as "Ancestrale". This method is halfway between a traditional Classic Method and re-fermentation in the bottle: the second fermentation takes place spontaneously in the bottle.

Amico Frizz

A jovial and refreshing sparkling white obtained by refermentation in the bottle according to the ancestral method. Even if the grapes are aromatic, the wine isn't perfumed - the aromatics play out on the stone fruit side, rather than honey and flowers. Intense notes of yeast and crunchy plums to the nose lead to an excellent balance and thriving freshness. Playful beverage meant for sharing with your favourite "Amico" (friend).
